Chicken Chickpea Salad

SERVE 2 PEOPLE

Ingredients

  • 1 cup chicken breast cut in cubes
  • 1/2 cup chickpeas (soaked overnight)
  • 1/4 cup red kidney beans
  • 1 large cucumber
  • 1 large carrot
  • 1 apple
  • 1 cup iceberg/lettuce chopped
  • 2 tbsp olive oil for cooking and dressing of salad
  • Salt as required
  • 1 tsp red chilli flakes
  • 1 tsp black pepper
  • 1/2 tbsp ginger garlic paste
 

Directions

  • In a pot add chickpeas, edible soda and fill up with 2 litre water and soak overnight.

  • Next day, discard the water and in a new pot add 2 litre water and add soaked chickpeas.

  • Cook for 1 hour or until chickpeas are well tender and set aside.

  • Heat oil and saute chicken with ginger garlic paste, salt, red chilli flakes, pepper, cook well and set aside.

  • In a bowl start dumping all the veggies, chickpeas, red kidney beans and chicken and mix well. Add seasonings and mix and serve.
