Ingredients
- 1 cup chicken breast cut in cubes
- 1/2 cup chickpeas (soaked overnight)
- 1/4 cup red kidney beans
- 1 large cucumber
- 1 large carrot
- 1 apple
- 1 cup iceberg/lettuce chopped
- 2 tbsp olive oil for cooking and dressing of salad
- Salt as required
- 1 tsp red chilli flakes
- 1 tsp black pepper
- 1/2 tbsp ginger garlic paste
Directions
- In a pot add chickpeas, edible soda and fill up with 2 litre water and soak overnight.
- Next day, discard the water and in a new pot add 2 litre water and add soaked chickpeas.
- Cook for 1 hour or until chickpeas are well tender and set aside.
- Heat oil and saute chicken with ginger garlic paste, salt, red chilli flakes, pepper, cook well and set aside.
- In a bowl start dumping all the veggies, chickpeas, red kidney beans and chicken and mix well. Add seasonings and mix and serve.
